Abstract
This paper proposes a reflection on the impact that, in France, the principle of secularism has on dietary choices motivated by the religion. In particular, this issue is examined in school canteens. It is in these contexts, in fact, that the question has raised of how to balance the principle of neutrality in the organization of the catering service with instances of protection expressed by those students, who, for religious reasons, ask for alternative menus to specific foods prohibited by their conscience.
