Abstract
[Machine translation] In Chianal, a small community in the Upper Varaita Valley (Cuneo), until the last post-war period, a community oven operated and bread with a very special aroma was prepared, thanks to the cooking made with stone pine from the “Alevè forest”, the largest forest in Europe of this arboreal essence, located in the heart of the Varaita Valley. The students of the master's degree course at the University of Gastronomic Sciences, who interviewed the elderly of the village to reconstruct this ancient production chain, present Chianal's bread and propose it as a new passenger for the Ark of Taste. Students from the UNISG High Apprenticeship course for bakers and pizza makers also participated in the investigation work, creating a synergistic work of teaching and research.
