Abstract
A W/O/W multiple emulsion was formulated using non-ionic, non- ethoxylated, skin compatible and non-irritating emulsifiers derived from glycerol, from glucose and from saccarose. The obtained emulsion, whose molteplicity was microscopically confirmed and checked by dye diffusion experiments, resulted stable after centrifugation and denoted a pseudoplastic rheological behaviour with very light tixotropy. High concentrations of glycolic acid dissolved in the inner acqueous phase of the multiple emulsion determined a significant loss of molteplicity in the system. Emulsions additioned of low concentrations of glycolic acid in the inner aqueous phase and rutin or bilberry antocianosides in the external one resulted to be multiple and no diffusion of functional substances from an aqueous phase to the other took place through the W/O and O/W interfaces.
