Abstract
[Machine translation] The essay traces the history and cultural context of reference of the “Granaries of Memory”, from its conception to its creation, up to the establishment of the homonymous Laboratory at the University of Gastronomic Sciences of Pollenzo, where the author worked from 2012 to 2019., This is a recent but significant page in the history of Italian anthropology, in which numerous ethnographic researches originated and have merged, conducted both by UNISG and by numerous researchers from other Italian institutions and universities, as well as the international network of Slow Food, an associative reality that is the basis of UNISG as well as of the “Granaries of Memory” project itself.
