Abstract
[Machine translation] This is research to support and integrate the application dossier for traditional Italian espresso coffee as an intangible heritage of humanity at UNESCO. The Consortium for the Protection of Traditional Italian Espresso Coffee has entrusted the University of Gastronomic Sciences with the task of creating a collection of video testimonials and a series of thematic video documentaries., The UNISG research group (scientific direction Gianpaolo Fassino; anthropological research by Gianpaolo Fassino, Piercarlo Grimaldi, Davide Porporato; directed by Luca Ghiardo and Luca Percivalle), has carried out an extensive ethnoanthropological survey on traditional Italian espresso through about seventy interviews, throughout the country in the period June-November 2018, with roasters, producers of coffee machines, importers of raw coffee, baristas, patrons and owners of historic coffees. A wide selection of the full interviews collected during the research can be consulted in the “Granaries of Memory”, in a special archive dedicated to traditional Italian espresso. The overall result of the research work is the video documentary Espresso, an Italian tradition, and a series of nine thematic videos that narrate, with a wealth of content, how espresso coffee is a purely Italian cultural tradition.
